Industrial Cook
PURPOSE:
The Cook position in Catalina Finer Foods is responsible for preparing food products in compliance with safety, quality, and regulatory standards. This role supports the production of high-quality meals by ensuring all cooking processes follow USDA, HACCP, and SQF requirements. The Cook is expected to maintain a clean, safe, and compliant working environment while minimizing food safety risks and contributing to operational goals. This position reports to the Kitchen Manager or Operations Manager.
PRINCIPAL DUTIES AND RESPONSIBILITIES:
· Ensure proper handling and preparation of food in accordance with HACCP and USDA guidelines.
· Understand and comply with all food safety policies and procedures including the color-coded container policy.
· Maintain proper documentation and records.
· Maintain a clean and sanitary work environment at all times.
· Notify Kitchen Manager or Operations Manager or Plant Management of any repairs or safety concerns.
· Initiate corrective actions to prevent the occurrence of nonconformities.
· Control nonconforming products until issues are corrected.
· Verify that all products meet internal and customer specifications.
· Follow the HOLD procedure.
· Understand cooking temperatures required by USDA.
· Follow SOPs related to sanitation and chemical handling.
· Keep raw material pallets separate to avoid contamination.
· Operate forklifts or pallet jacks only if certified.
KNOWLEDGE, SKILLS, AND ABILITIES REQUIRED:
· Full understanding of GMPs, HACCP, SQF, and OSHA regulations.
· Ability to read, write, and communicate effectively in English.
· Basic math skills required to adjust or multiply recipes.
· Strong math skills for measurements and inventory control.
· Knowledge of equipment calibration (as applicable).
· Effective communication across all levels.
· Ability to work under pressure in fast-paced environments.
· Must be able to lift and stack items up to 50 lbs.
PHYSICAL DEMANDS:
Frequent standing, lifting, and movement in kitchen and production areas. Lifting materials up to 50 lbs. Use of PPE including gloves, ear protections, safety shoes and manufacturing uniform as required. WORKING RELATIONSHIPS:
· Internal: Kitchen Manager or Operations Manager, Production Team, QA.
· External: Maintenance or Sanitation Contractors.
