STARR Restaurants x The Nora Hotel

STARR Restaurants will lead all food and beverage operations at The Nora, anchoring the property with the West Palm Beach debut of Pastis, the iconic New York brasserie, alongside rooftop dining, in-room service, and additional hotel concepts developed in close collaboration with BD Hotels and Sean MacPherson. Together, the partnership is designed to create more than a hotel stay. It is a seamless extension of the district itself, where guests and locals come together through dining, culture, and connection.

This landmark project will help shape the next chapter of hospitality in West Palm Beach and serve as the social anchor of the NORA District.

Position Overview

As we prepare for opening, we are seeking a Director of Food & Beverage to lead and oversee all on-property event, IRD, restaurant, and bar operations. This is a highly operational, property-level leadership role best suited for a seasoned Director-level individual who has successfully led complex, high-volume environments and is ready to take ownership of a multi-outlet hotel platform.

In collaboration with the Hotel General Manager and hotel leadership team, this individual will align food and beverage operations with both transient and group-driven hotel demand, ensuring that the hotel guest is treated as a primary stakeholder across every F&B touchpoint. Success in this role requires fluency in both independent restaurant operations and the dynamics of a high-performing hotel environment.

What You Will Own

  • Full P&L oversight across all food and beverage outlets
  • Operational performance and service standards property-wide
  • Labor strategy, forecasting, and workforce planning
  • Leadership development of General Managers and outlet leaders
  • Guest experience and brand integrity across all touchpoints
  • Pre-opening operational buildout and systems implementation

Leadership

  • Establish a culture of accountability, hospitality, and performance
  • Develop and mentor General Managers and F&B leaders
  • Ensure alignment between culinary and front-of-house teams
  • Lead by presence during peak service and key events

Build the Business

  • Drive revenue growth through programming and strategic partnerships
  • Manage labor, COGS, and operating expenses to meet budgeted targets
  • Participate in P&L reviews and implement action plans as needed
  • Partner closely with the Hotel General Manager and hotel leadership to align outlet performance, in-room dining, and event operations with occupancy patterns, group business, and overall hotel strategy
  • Collaborate with marketing and events teams to maximize outlet performance

Build the Team

  • Maintain hiring strategy for salaried and hourly F&B leadership roles
  • Ensure structured onboarding and leadership development programs
  • Maintain appropriate staffing levels to support operational excellence
  • Develop succession planning across all outlets

Drive for Results

  • Monitor weekly financial performance and adjust strategy accordingly
  • Implement operational systems that scale without compromising hospitality
  • Ensure compliance with all health, safety, and regulatory standards
  • Build infrastructure to support seasonality and growth

What We’re Looking For

  • 10+ years of progressive food and beverage leadership experience
  • Proven success leading multi-outlet or hotel operations
  • Strong financial acumen and complex P&L management experience
  • Pre-opening experience preferred
  • A hands-on operator comfortable balancing strategy and service execution
