The Opportunity
As a Line Cook at St. Pete Athletic, you are the backbone of the culinary program—executing chef-driven dishes that range from quick courtside bites to fine-dining plates and private event menus. With precision, speed, and an uncompromising commitment to quality, you’ll ensure every guest enjoys an elevated dining experience that reflects the club’s luxury hospitality standards and performance-driven philosophy.

Key Responsibilities
Culinary Preparation & Execution
- Prep proteins, produce, sauces, and garnishes daily, labeling and rotating using FIFO standards.
- Follow recipes, plating guides, and portioning specifications; provide feedback to chefs on efficiency and guest response.
- Execute plates to luxury service standards—temperature, flavor balance, portion accuracy, and garnish consistency.
- Respond to expo and call orders across courtside, café, dining, and event service with speed and accuracy.
- Maintain ticket times in accordance with SOPs, adjusting pace collaboratively during peak volume.
- Prepare gluten-free, vegan, and allergy-sensitive items carefully, following cross-contamination protocols.
Food Safety & Quality Standards
- Verify cooking, holding, and storage temperatures; log cooler/freezer checks during shifts.
- Adhere to HACCP guidelines, sanitation checklists, and allergy protocols.
- Sanitize work surfaces, tools, and equipment continuously throughout service.
- Sample daily taste plates to confirm flavor profiles meet chef and brand standards.
- Minimize food waste through mindful prep, proper storage, and portion control.
Station Management & Operations
- Complete opening and closing procedures for assigned stations (mise en place, restocking, logs, deep cleaning, breakdown).
- Restock supplies proactively (oils, seasonings, garnishes) before service.
- Rotate across stations—grill, sauté, pantry, prep—based on daily needs and events.
- Support banquet, buffet, and plated service execution for VIP events, tournaments, and wellness programming.
Inventory & Reporting
- Assist with weekly inventory counts and report low stock or quality concerns to sous chef.
- Receive and store deliveries, inspecting for quality, expiration, and proper handling.
Team Collaboration
- Communicate clearly with expo, service, and culinary teammates on timing, delays, and handoffs.
- Confirm handoffs verbally to ensure accountability.
- Support teammates during peak periods to maintain flow and quality.
- Flexibly accommodate early mornings, late evenings, weekends, and private events.
Professional Standards
- Arrive in a clean, pressed uniform with polished non-slip shoes.
- Exhibit a positive, solution-oriented attitude under pressure.
- Report equipment malfunctions or safety hazards immediately.
- Uphold the club’s culinary philosophy of wellness, lifestyle, and performance-focused dining.
- Ability to stand for extended periods, lift at least 30 lbs, and work in hot, fast-paced environments.
