GENERAL EXPECTATIONS: We are searching for an engaging, courteous Sushi Cook who is passionate about food and beverage preparation and education. The Sushi Cook will be responsible for producing all items as specified from Sushi bar & All Chefs.
ESSENTIAL FUNCTIONS OF THE POSITION INCLUDE, BUT ARE NOT LIMITED TO: ? Provide a friendly, personal demeanor with a willingness to interact? Provide professional and friendly guest services? Commits self to the below listed Company values, and acknowledges dedication to providing excellent guest service for our Guests and our internal team, at all times? Assist and provide recommendations to Executive Chef in kitchen menu planning and development including updates on food allergies? Assist Executive Chef with food cost controlling. Provide recommendations to reduce costs and increase savings? Carry out service in accordance to the procedures? Maintain highest-level possible of cleanliness and sanitation standards throughout the area of responsibility, which will meet or exceed Federal, State, and Local standards.? Comply with all safety and health department procedures? Set-up, operate and clean all kitchen machinery/equipment properly and safely and store it in its proper place? Clean and sanitize food service, preparation ware, dish room, pot room and kitchen areas? Scrape/spray all ware before placing in ware-washing machine? Rack all china and glassware according to dish room standards. Ensure all ware is clean and sanitary before removing from dish room areas? Take out trash as needed? Practice proper food handling procedures? Separate all ware and store properly in designated areas? Efficiently work with materials and/or resources being aware of and minimizing costs and expenses? Maintain equipment quality thru preventative maintenance and cleaning? Attention to detail on areas of grease, grime, proper storage, stacking heights, chemical usage and storage, etc.? Follow cleaning schedule and closing list thoroughly? Communicate effectively on all levels. Report problems and concerns with machinery to the Executive Chef? Perform related duties as assigned? Comply with all safety and health department procedures as well as ette hotels and/or departmental policies/procedures? Ability to participate in service as dictated by company philosophy? Assists and/ or completes additional tasks as assigned
QUALIFICATIONS:? High School Diploma required? Two years culinary education preferred? Proof of eligibility to work in the United States? Valid Driver's License? 21+ years of age? Possession of or the ability to possess all state required work cards. Food handling certification? Maintain a professional, neat and well-groomed appearance adhering to Company standards? Minimum of four (4) years in a management role overseeing high volume or casual high - end restaurant operations
? Well versed in both classic American cuisine as well as a background in fast paced environment? Experience planning and developing menus and recipes? Knowledge of Opening and closing duties, proper lifting techniques, guest relations, sanitation and safety, kitchen crockery and utensil usage? Knowledge of kitchen manpower labor cost and its control.? Knowledge of geographical layout of the kitchen, its equipment and its operation; emergency procedures? Knowledge of food safety and health and safety at work? Ability to proactively lead a team? Proficient in Windows Office, Microsoft Office, Mac OSX, POS systems.
SKILLS: ? Must have strong problem solving skills? Ability to communicate effectively and assertively in the English language, both verbally and in writing with staff, clients, and the general public? Ability to maintain a high level of confidentiality? Ability to write reports, business correspondence and procedure manuals? Ability to demonstrate a positive attitude at all times? Ability to keep an open and objective view? Ability to listen empathetically and be respectful at all times? Ability to maintain composure and stay focused? Ability to maintain personal integrity? Ability to work as a team, stay organized, handle various projects at one time, follow up and make accurate decisions? Ability to handle a fast-paced, busy, and somewhat stressful environment, and work under pressure and meet deadlines
