Overview: The Food and Beverage Director is responsible for the overall operation of the Food and Beverage Department and for meeting or exceeding the Dining Services hospitality and service standards for all dining venues at East Ridge at Cutler Bay. The Director shall have the ability to meet budgetary guidelines, forecast necessary department needs, train, develop, supervise and manage all members of the Food and Beverage Team. Overall effective dietary services; selecting, training and supervising all dietary services personnel; procuring supplies and equipment; assisting with budget preparation and operating within budgetary guidelines.
Essential Job Functions:
- Establish formal dining standards of excellence for the entire community as approved by the Executive Director.
- Operate the department with the highest degree of efficiency while adhering to budget guidelines and parameters at all times.
- Establish formal training and development standards for dining, culinary and dietary team members.
- Work collaboratively with the Executive Chef on menu planning and cycle menu process.
- Ensure menu compliance is adhered to with regard to Resident dietary restrictions.
- Implement standard practices for financial accountability using the Point of Sale system.
- Manage procurement and inventory control of all china, glass, silverware and table linen for all dining venues.
- Establish, implement and manage dining hours of operation for all dining venues; ensuring an optimal balance of resident satisfaction and staffing efficiency is maintained.
- Prepare reports for department usage, inventory, and expenses in a timely basis. This includes maintaining required records/reports for (a) number and types of regular and therapeutic diets, (b) prepared nutritional and caloric analyses of meals, costs of raw food and labor, (d) computation of daily meal costs, (e) inventory of equipment and supplies and (f) develops and directs department cost control procedures.
- Establish and maintain an accurate system for the tracking of meals served.
- Liaison with the Certified Dietician to ensure compliance with all State and Federal guidelines.
- Liaison and coordinate directly with residents, family members, department heads, and external customers for providing special banquet events, parties, or similar activities.
- Assures efficiency of food preparation and serving; compliance with local, state and federal standards; sanitation, and hygiene and health standards of personnel
- Participates in the research, preparation and writing of department budget.
- Visits patients periodically to evaluate food service such as quality, quantity, temperature and appearance; and conducts evaluations to make revisions in dietary procedures to promote better food service.
- Monitors the care and the safe and sanitary use of supplies and equipment and all infection control policies and procedures.
- Confers with other department heads regarding program and physical aspects of food and beverage service. Establishes effective relationships with medical staff, nursing and other patient/resident care services.
- Attends in-service training and education sessions as assigned.
You Have:
- Bachelor's degree with preferred major in hospitality or management.
- A minimum of three years' experience of management experience in health care industry.
