What You'll Do
The Chef de Cuisine position will be responsible for the following:
- Consistently maintain a high level of cleanliness throughout the restaurant
- Responsible for administrative duties for the back of house
- Collect and input all back of house invoices
- Update Prime Cost Log with accurate back of house data
- Maintain all ordering, processing, menu costing, and maintain an appropriate food cost as agreed upon by upper management.
- Take ownership of all proper receiving processes; all product should be up to the standards of the restaurant
- All products when possible should be ordered from the Farmer’s Market
- Always should be ahead of seasonal changes
- Ensure that there is never excessive overtime unless otherwise approved by upper management
- Oversee hiring and firing of back of house staff.
- Write effective and fair schedules.
- Perform semi-annual reviews for back of house staff and Sous chef(s)
- Address any maintenance issues as soon as they arise and properly communicate those issues.
- Maintain a clean and orderly workspace.
- Product check should be completed each morning to ensure quality product.
- Mise en place should be checked every day
- All recipes for batched items should be tasted as they are completed throughout the day
- Responsible for teaching and training all staff on new dishes, stations and products.
- Ensure that all staff has clean uniforms and all proper tools at each shift

The employee must frequently lift and/or move up to 75 pounds. Specific vision abilities required by this job include close vision, peripheral vision, depth perception and ability to adjust focus.
