Kitchen Manager

Famed Italian sandwich shop All'Antico Vinaio is opening it's first store in Miami and is looking for a Kitchen Manager to lead it's Back of House team in production.

This is a key leadership position for someone who takes pride in great food, cleanliness, consistency, and developing a strong kitchen team.

The ideal candidate has experience in a high-volume restaurant or quick-service environment and understands that success comes from executing great food quickly, efficiently, and consistently.

Responsibilities

• Lead day-to-day kitchen operations
• Prepare and execute bread, proteins, sauces, sides, and other menu items according to recipe and quality standards
• Maintain consistent portioning, presentation, flavor, and food quality
• Train, coach, and motivate kitchen staff
• Delegate prep and service responsibilities and keep the team organized
• Manage daily prep lists and ensure the kitchen is properly stocked for service
• Monitor food inventory, product quality, waste, and portion control
• Assist with ordering and receiving food and kitchen supplies
• Maintain a clean, organized, and efficient kitchen throughout the day
• Follow all food safety, sanitation, and health department standards
• Ensure proper food storage, labeling, temperature control, and rotation
• Help control food and labor costs while maintaining quality
• Communicate effectively with management and front-of-house staff
• Troubleshoot kitchen issues and help keep service moving during busy periods
• Open and/or close the kitchen as needed
• Help develop and maintain recipes, prep procedures, and kitchen systems
• Lead by example and contribute to a positive, respectful kitchen culture

What We're Looking For

• 3+ years of kitchen leadership experience preferred
• Experience in quick-service, fast-casual, deli, sandwich, or high-volume restaurants is a plus
• Bread baking experience a major plus.
• Strong knowledge of food preparation, kitchen organization, and food safety
• Ability to work calmly and efficiently in a fast-paced environment
• Strong communication and leadership skills
• Reliable, punctual, and accountable
• Comfortable working on your feet for extended periods
• Strong attention to detail and pride in cleanliness
• Ability to train and hold team members accountable to standards
• A team-first attitude and willingness to jump in wherever needed
